Olivier Jacquinet farms his 7-ha vineyard classified in 1st cru, using the ‘integrated’ method. This is a ‘blanc de noirs’ made from two pinot grapes (20% pinot meunier). Regular bubbles cross its golden colour; its animal nose is slightly expressed, but remains fresh and long in the mouth. Best with some cheese or refined delicatessen. (RM).
